As the 35-year-old sole breadwinner watches her six-year-old son Omar, four-year-old daughter Sama, and three-year-old son Mahmoud enjoy their meal, a profound worry lingers—where will the next meal come from?
Sahar’s journey as a single mother began three years ago when her husband was tragically killed due to Israeli shelling in northern Gaza. The relentless rise in food prices, mainly attributable to the long-standing siege, subjects families like Sahar’s to the threat of famine, an impending crisis that has gripped the region.
The consequences of food scarcity have been severe. During the recent famine, Sahar’s children, particularly Omar and Sama, suffered from significant malnourishment as eggs and vegetables became scarce and unaffordable. Despite the family’s current capability to eat more regularly, they continue to struggle, subsisting on only one meal a day. The aftereffects of previous hunger patches linger, with Sahar reflecting on how the famine left Omar and Sama weakened, both physically and emotionally.
“My greatest fear is that my children will become weak again. My wish is to see them healthy, but providing them with the necessary daily nutrition is a constant challenge,” said Sahar.
The United Nations Office for the Coordination of Humanitarian Affairs (OCHA) has recently issued stark warnings, indicating that Gaza is on the brink of a food emergency that could devolve into another famine. Justin Brady, the head of OCHA in Palestine, stated that a staggering 67 percent of Gaza’s populace faces food insecurity. Alarmingly, over 200,000 people—around 10 percent of the region’s population—live under conditions that precede a famine declaration by the Integrated Food Security Phase Classification.
In her community, makeshift kitchens have emerged as vital lifelines, providing basic meals primarily composed of rice but lacking essential proteins and nutrients critical for children’s growth. Sahar emphasized that while these meals can fend off immediate hunger, they do not deliver comprehensive nourishment needed for healthy development.

Nutrition specialist, Dr. Ghada Jibril, highlights the compelling needs of children affected by malnutrition, noting that recovery goes beyond the mere end of hunger. “A child who has endured severe malnutrition requires a diverse diet and consistent medical follow-up to regain their health. Nourishment must encompass not just caloric intake but essential proteins, vitamins, and minerals critical for growth and development,” Dr. Jibril explains.
